1 c. corn meal 1 tbsp. sugar 1 tsp. salt 1 c. boiling water 1 c. milk Bacon fat Heat corn meal in 2-quart oven proof bowl in 375 degree oven, stirring twice, 5 minutes. Stir in sugar and salt. Pour in boiling water gradually, stirring vigorously with fork until all lumps are removed. Stir in enough milk to make smooth slightly thick batter. Grease heated griddle with bacon fat. Pour batter from 1/4-cup measuring cup onto griddle, spreading to 1/4-inch thickness. Bake on both sides until brown. Stir enough milk into batter, if necessary, to make batter easy to spread. About 8 Johnny cakes. |
