HOT MILK SPONGE CAKE 
2 tbsp. butter
3/4 c. milk
3 eggs
1 1/2 c. white sugar
1/8 tsp. salt
1 1/2 c. flour, sifted 3 times
1 1/2 tsp. baking powder
1 tsp. vanilla or lemon flavoring

Heat butter with milk until hot. Beat eggs, sugar and salt until lemon colored. Sift flour and baking powder together. Add flour mixture alternately with milk mixture to egg mixture. Add vanilla or lemon extract. Beat (whip) hard on high for 1 minute. Pour into greased 13"x9" pan. Bake at 375 degrees for 30 minutes. This also makes 2 (9") layers (test after 20 minutes).

This was my grandmother's recipe, she used it for berry shortcake or frosted layer cake.
