ZUCCHINI BEEF CASSEROLE 
6 c. sliced zucchini
1/2 c. chopped onion
1/4 c. butter
1 lb. ground meat or turkey
1/4 tsp. oregano or more
2 c. milk
Salt & pepper
1/4 c. flour
1 c. grated cheese, American of Velveeta

Slice zucchini into 1/2" thick slices. Parboil for 3 minutes; drain. Brown meat and onion and cook until onions are limp. Add seasonings mixing well. Melt butter; blend flour. Simmer 1 minute; add milk, cook slowly, stirring until it boils and thickens. Stir in cheese. In a 2 quart casserole, layer zucchini, meat and cheese sauce; repeat. Bake in 350 degree oven for 30 minutes.
