CARROT CUPCAKES 
1 1/2 c. flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2/3 c. oil
2 eggs
1 c. grated carrots
1/2 c. crushed pineapple
1 tsp. vanilla

Cream sugar, eggs and oil. Blend in dry ingredients. Add vanilla and carrots and pineapple. Bake at 325 degrees for 25 minutes.
