CARROT CAKE & FROSTING 
CAKE:

2 c. flour
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
4 eggs
2 c. sugar
1 1/4 c. Mazola oil
3 c. grated carrots

Heat oven to 350 degrees. Sift together flour, soda, cinnamon and salt. Beat eggs until thick; then add sugar, oil and the flour mixture. Then fold in carrots. Bake 45 to 50 minutes.

FROSTING:

1/8 lb. butter
4 oz. cream cheese
1/2 lb. powdered sugar
1 c. ground nuts
1 tsp. vanilla

Beat all ingredients together with electric mixer. Add milk if needed.
