CARROT CAKE WITH CREAM CHEESE
FROSTING
 
1 1/2 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
3/4 tsp. salt
1 1/2 c. sugar
3 eggs
1 c. oil
1 1/2 c. raw carrots, grated
Sm. can crushed pineapple (in its own juice)
3/4 c. chopped walnuts

Mix oil, sugar and eggs (one at a time). Beat well after addition. Add dry ingredients, a little at a time. Mix well.

Add carrots, pineapple and nuts. Pour into greased and floured 9 x 14 x 2 inch pan. Bake at 350 degrees for 40 minutes.

FROSTING:

1/2 box confectioners' sugar
2 tbsp. butter
2 tsp. butter
Drop of salt
1/2 tsp. vanilla

Beat together.
