KEY LIME PIE 
1 sm. pkg. vanilla pudding
1 sm. pkg. lime gelatin
1 (8 oz.) pkg. Cool Whip
2 c. water
1/4 to 1/3 c. sugar
Grated rind from 1 lime
Juice of 1 lime
1 graham cracker or chocolate crumb crust

Combine pudding, gelatin, sugar and water in a medium size pan. Cook until it comes to a full boil. Add grated rind and lime juice and stir to mix thorough. Pour into a large stainless steel bowl and cool. To cool quickly, pour ice cubes into sink with water and place bowl into iced water. Stir constantly until completely cooled. Whip in the Cool Whip until smooth and pour into crust. Makes 1 regular size pie plus 2 small pudding servings. Refrigerate for at least 3 hours and serve. Mmmmmmmm Good!
