TACO MEAT LOAF 
1 1/2 lbs. lean ground beef
1 (8 oz.) can tomato sauce
1/2 c. soft bread crumbs
1/2 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. chopped green chilies
1 egg
1 (3 1/4 oz.) pkg. taco seasoning mix
1 c. shredded sharp cheddar cheese
1 c. sour cream
Corn tortilla chips

Mix together meat, tomato sauce, bread crumbs, onion, green pepper, chilies, egg and seasoning mix. (I put in almost the whole can of Ortega chopped peppers.) Press half the mixture into a 6-cup glass ring mold or 9"x13" loaf pan. Top with 2/3 of cheese. Then put remaining meat mixture and top with remaining cheese. Bake in 375 degree oven (cold start) for 45 to 50 minutes.

Microwave: On High for 10 to 12 minutes, turning every 4 minutes. Drain off fat. Turn out on serving dish, garnish with sour cream and chips. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
