OAT BRAN MUFFINS 
2 1/4 c. oat bran
3/8 tsp. baking soda
3/8 tsp. baking powder
1/4 c. chopped walnuts (optional)
3 egg whites
2 tbsp. safflower oil (Puritan)
1/2 c. honey
1/4 c. brown sugar
3/4 c. skim milk
1 c. blueberries
1/2 tsp. cinnamon, vanilla or almond extract

Bake for 25 minutes at 350.
