1 lg. potato, cooked & mashed
1 tbsp. butter
Peanut butter
1 tsp. vanilla
1 lb. confectioners' sugar
1 tsp. salt

Add butter, salt and vanilla to mashed potatoes. Add sugar until thick and stiff. Roll out into rectangle. Spread with peanut butter. Roll jelly roll style; chill until set. Slice.
