POACHED FISH | |
1 1/2 to 2 c. milk 3 tbsp. lemon juice 1 med. onion, sliced 1 bay leaf A few whole cloves or peppercorns 1 lb. fish fillets Stir together the milk, lemon juice, onion, and seasonings in a large skillet. Bring to a simmer. Add the fish and cover; adjust the heat to maintain a simmer. Cook for 5-10 minutes or 10 minutes per 1 inch of thickness of fish. The fish is done when it is opaque and flakes easily. Yields: 4 servings. |
