APPLESAUCE MEATBALLS 
2 lb. ground beef
1 c. bread crumbs
1 c. unsweetened applesauce
2 eggs
1/2 grated onion
Salt & pepper to taste
Garlic powder to taste

SAUCE:

1/2 lg. green pepper, chopped
1 lg. chopped onion
2 lg. grated carrots
3 stalks celery, cut fine
2 c. tomato juice

Meatballs: Mix into balls, roll in flour, brown in fat and place in baking dish.

Sauce: Bring all ingredients for sauce together and place in pan with drippings. Bring to boil, pour over meatballs and bake 1 hour at 350 degrees. (Bake longer if necessary to cook the vegetables which should form a sauce.) Serves 6-8.
