ZUCCHINI CASSATA 
1/2 lb. pork sausage
1 onion, chopped
5 sm. zucchini squash
1/2 c. cracker or bread crumbs
1/2 c. Parmesan cheese
Pinch of thyme and rosemary
Garlic salt to taste
2 or 3 eggs

Fry onion and sausage, breaking into little pieces. Parboil whole unpared zucchini for 10 minutes. Coarsely chop zucchini. Combine all ingredients except eggs. Pour in casserole dish. Beat eggs and pour over all. Mix very little. Bake at 350 degrees for 40-45 minutes.
