WHOLE WHEAT - OATMEAL BREAD 
2 c. boiling water
1 c. quick oats
1/2 c. brown sugar
1 tbsp. salt
4 tsp. butter
1 pkg. dry yeast (1 1/2 tbsp.)
1 c. whole-wheat flour
5 c. all-purpose flour
1 c. warm water

Combine boiling water, oats, brown sugar, butter and salt. Cool to warm. Dissolve yeast in 1 cup warm water. Add to batter. Add whole-wheat flour and white flour, enough to make smooth elastic dough (5 cups). Let rise until double in bulk. Punch down. Let rise again. Shape in small loaves and put in greased pans. Let rise again.

Bake at 350°F for 25 minutes.
