WATERMELON RIND PICKLE | |
8 lb. melon rind, cut into 1-inch pieces 10 lb. sugar 2 qt. white vinegar 2 sticks cinnamon 5 drops oil of cloves 1 bottle Lilly lime (drug store) 1/4 c. salt Soak rind overnight in lime and enough water to cover. Stir several times if possible. Second morning, drain off lime water and rinse rind in cold water 2 or 3 times. Cover with water and salt; bring to boil. Boil for 20 minutes and then drain. Make syrup of vinegar, sugar, cloves and cinnamon. Stir well; this is not heated. Add rind; bring to a boil. Boil for 10 minutes. Let stand overnight. Next a.m., boil again for 10 minutes. Put in hot jars and seal. In memory of Julia Johnson. |
