ONE HOUR PAELLA 
4 Italian sausages, cut into 1 inch pieces
1 med. onion, chopped
1 sm. red bell pepper, chopped
1 sm. green bell pepper, chopped
2 lg. garlic cloves, crushed
2 boneless chicken breasts, skinned and cut into 1 inch pieces
1 1/2 c. long grain rice
2 1/4 c. chicken broth
Salt and pepper to taste
12 med. prawns (shrimp), in shell
2 med. tomatoes, peeled, quartered and seeded
Pinch ground saffron (optional)

In heavy dutch oven over medium high heat, saute sausage 5 to 6 minutes. Add onion, peppers, garlic and saute until soft. Add chicken and saute 6 - 8 minutes until lightly browned. Add rice, saute until translucent. Add broth; season with salt and pepper. Bring to boil, reduce heat to low, cover and simmer until all liquid is absorbed, about 20 minutes. Add shrimp, tomatoes and saffron. Cover and cook until shrimp are pink, about 8 to 10 minutes. Serve!
