ZUCCHINI CASSEROLE 
1/2 c. butter
1 pkg. chicken flavored Stove Top dressing mix
6 c. peeled & cubed zucchini
1 c. shredded carrots
1 med. onion, finely chopped
1 can cream of chicken soup
1 c. sour cream

In saucepan melt 1/2 cup butter. Pour over stuffing mix in bowl; toss to mix. (Do not add water.) In saucepan in which butter was melted, cook zucchini, carrots and onion for 5 minutes; drain well.

In medium bowl combine soup and sour cream; add vegetables and mix. Put 1/2 of stuffing in greased 9 x 13 inch baking dish. Cover with zucchini mixture. Top with remaining stuffing mix. Bake in 350 degree oven for 30 minutes.
