SWEET PEPPERS & TOMATOES | |
1/4 c. oil 2 c. onions, sliced 1 tsp. salt Black pepper 4 c. sliced sweet peppers 3 c. fresh tomatoes, coarsely chopped Heat oil over moderate heat. Add onions and cook until soft and lightly browned. Stir in peppers and cook for 10 minutes. Add tomatoes, salt and black pepper. Cook until almost all the liquid has boiled away. Serve as a hot vegetable dish. Serves 4 to 6. My mother's recipe - a favorite when we were growing up. |
