SWEET POTATO PIE 
4-5 med. sweet potatoes
1 c. white sugar
2 eggs
1 can evaporated Pet milk
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger (more or less spice depending on taste)
2 pie crusts

Peel, cube and boil sweet potatoes (30 minutes on medium heat) until tender; drain. Combine the remaining ingredients in the way any good cook would. Blend until you see virtually no lumps. Batter will be somewhat thin.

Pour into the pie shells and bake 45 minutes at 350 degrees. Best served semi warm with ice cream. Keep in the refrigerator after cutting, that is if there are any remaining slices! Enjoy.
