PUMPKIN FRITTERS 
1 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
1/2 c. light cream
1 egg, well beaten
1 c. cooked, mashed pumpkin or canned pumpkin

Sift together flour, salt and baking powder. Combine egg, cream and pumpkin. Add to dry ingredients, mix well. Drop batter from tablespoon into deep hot oil (about 370 degrees). Fry until golden brown on each side.
