LEMON BUTTER CHICKEN 
2 lb. chicken breasts
2 eggs
Bread crumbs
1 stick butter
1/4 c. lemon juice
1/4 c. white wine (optional)

Put chicken breasts in beaten eggs, coat them with bread crumbs. I use Italian crumbs; it tastes better. Melt 1 stick butter and put in lemon juice. Place chicken in saucepan with lemon and butter. Simmer on medium heat until chicken is brown on both sides. Then cover and simmer on low heat for 1 hour.
