ICE CREAM SANDWICHES | |
2 1/2 c. flour 1 1/3 tsp. baking soda 1 3/4 c. sugar 1/2 c. cocoa 1/2 c. shortening 1/4 c. butter 1 tsp. vanilla 2 eggs Mix all together. Roll out 1/4 inch thick dough. Using small amounts of dough, cut into rectangular shape. Place on cookie sheet and prick with a fork. Bake at 375 degrees for 8 to 10 minutes. Cool and remove from pan. Cut ice cream and place between two cookies. Wrap in waxed paper and freeze. If eaten with 3 to 4 days they will be crispy; after that they will be softer. |
