MEATBALL STROGANOFF | |
1 lb. ground beef 1/2 c. finely chopped onion 1 egg 6 saltine crackers, crushed 1/2 tsp. salt Generous dash pepper 1 can Campbell's cream of mushroom or cream of chicken mushroom soup 1/2 c. sour cream 1/3 c. water 3 c. cooked wide noodles (rice may be preferred) Mix beef, onion, egg, bread, salt and pepper, shape into 16 meatballs (or smaller ones if preferred). Brown in skillet (using shortening if needed); pour off drippings. Add soup and water. Cover and simmer 10 minutes, stirring occasionally. Blend in sour cream; heat. Serve over noodles (or rice). Serves 3 to 4. |
