CHICKEN IN THE LIMELIGHT 
1 broiler fryer
1 lime
1/3 c. flour
1 1/2 tsp. salt
1/2 tsp. paprika
1/4 c. Crisco
2 tbsp. brown sugar
1/2 c. chicken broth
1/2 c. dry white wine
2 sprigs fresh mint
Garnish avocado, lime or fresh mint

Preheat oven to 375 degrees. Wash chicken, drain and pat dry. Grate peel of lime and set aside. Squeeze lime juice over chicken. Shake chicken pieces in a bag with flour, salt and paprika.

Melt Crisco in a heavy skillet and brown chicken on all sides. Put chicken in baking pan. Combine lime peel and brown sugar and sprinkle over chicken. Add liquid. Place mint on top. Cover and bake at 375 degrees for 40-45 minutes. Garnish
