HOMEMADE SALAMI 
2 lbs. hamburger
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
2 tbsp. Morton Tender Quick
1 tbsp. liquid smoke
3/4 c. water
1 tbsp. mustard seed

Mix all ingredients very thoroughly with mixer or by hand. Shape into 2 salami-like rolls on 2 sheets of aluminum foil. Wrap and refrigerate for 24 hours. Place on pan and bake at 350 degrees for 1 hour. At the end of baking time, prick with fork to drain excess grease. Rewrap in new foil when cool.

Note: Use only Morton Tender Quick; other products do not produce as good results.
