APPLE CAKE 
2 c. diced apples
1 c. chopped nuts (optional)
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 c. salad oil
1 1/2 c. sugar
2 tbsp. water
1 tsp. vanilla
2 eggs

Beat until smooth the oil, sugar, water, vanilla and egg. Stir in flour, mix, then add the apples and nuts. Pour into greased and floured 9x13 pan. Bake at 350 degrees for 30-40 minutes. Good served with whipped topping or ice cream.
