ENRICHED WHITE BREAD 
2 pkgs. dry yeast
2/3 c. warm water
6 c. flour
3 tsp. salt or less for low sodium
2 c. skim milk
1/4 c. canola oil

Dissolve yeast in 2/3 cups warm water. Combine rest of ingredients and mix to form soft dough. Place on floured board and knead 5-10 minutes. Put dough in greased mixing bowl and let rise 3-4 hours. Place in 2 greased loaf pans, cover and let rise 1-2 hours and then bake at 350 degrees for 35-40 minutes. (Makes 2 loaves or 4 dozen rolls).
