ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. cooking oil
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 c. grated zucchini
3 c. flour
1 c. chopped nuts

Beat together well eggs, sugar and oil. Add vanilla and zucchini. Sift together flour, cinnamon, baking powder, salt and soda. Add to other mixture. Blend then beat 1 minute. Blend in nuts, turn into a well greased pan. Bake 1 hour and 20 minutes at 350 degrees, 300 degrees for glass pan.
