JUICY MEATBALLS AND GRAVY 
1 lb. ground beef or chuck
1/4 c. chopped green pepper
2 tbsp. chopped onion
1 egg
2/3 c. (1 sm. can) undiluted Carnation evaporated milk
1 tsp. salt
1/4 tsp. pepper
1/2 c. fine bread or cracker crumbs
1/4 c. flour
1/2 c. shortening for frying

Combine beef with green pepper, onion, egg, milk and seasonings. Stir in crumbs. Blend well. Roll into 2 inch balls; dip in flour (save flour for gravy). Brown on all sides in hot fat. Place in casserole and bake in moderate oven (350 degrees) about 30 minutes.

CREAM GRAVY:

3 tbsp. meat drippings
3 tbsp. flour
1 c. undiluted Carnation evaporated milk
1 c. water
Salt and pepper to taste

Blend meat drippings and flour in skillet over low heat. Slowly add Carnation mixed with water. Season to taste. Stir until well blended. Cook over low heat about 5 minutes, stirring occasionally.
