MERINGUE COOKIES 
3 egg whites
1 tsp. vanilla
Pinch of salt
1 c. sugar
Green or pink food color
6 oz. chocolate chips or 6 oz. butterscotch chips

Butter 2 cookie sheets lightly. Beat egg whites with salt until frothy. Gradually add sugar. Beat until stiff. Add vanilla and chips, stirring gently. Drop by teaspoonsful on cookie sheets. Put into preheated 300 degree oven. Turn off oven immediately. Leave in 6 to 8 hours, or overnight. Makes about 3 dozen tea size cookies.
