2 lg. or 3 sm. eggs
1 c. salad oil
2 c. sugar
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon 1/2 tsp. salt
4 c. thinly sliced apples
1 c. chopped nuts

Beat eggs and oil until foamy. Add sugar and vanilla. Sift together flour, soda, cinnamon and salt. Mix with egg mixture. Add apples and nuts. Bake in greased 350 degree pan for 45 minutes or until knife comes out clean. Cool and frost with cream cheese frosting.
