CHEESE CAKE
CRUST:

1 stick butter
1 box crushed graham crackers
1/2 c. sugar
1 tbsp. cinnamon

CAKE:

12 oz. Farmers cheese or sm. curd cottage cheese
12 oz. cream cheese
3 eggs
1 1/2 c. sugar
3 tbsp. cornstarch
Pinch of salt
1 1/2 c. milk
2 tbsp. vanilla or your favorite liquor (I use Frangelico)
1 1/2 c. sour cream

Crust: Melt the butter. Mix in the crushed graham cracker crumbs, sugar, and cinnamon. Butter a cheese cake pan and line with the graham cracker mixture.

Cake: Beat the Farmers cheese or cottage cheese with the cream cheese. Add eggs, one at a time. Add sugar, cornstarch, and salt. Beat until smooth. Add the milk, vanilla or liquor, and sour cream. Blend well. Pour the mixture over the crust. Bake at 350 degrees for 1 hour to 1 hour 15 minutes or until a toothpick comes out clean. Turn off the oven and leave the cheese cake in the oven with the door open for an additional hour. Refrigerate well before serving.
