CHARLESTON RED RICE 
4 slices bacon
1/2 c. chopped green pepper
1 tbsp. brown sugar
1 1/2 c. long grain white rice
1 c. chopped onion
2 c. water
1 (8 oz.) can tomato sauce
Pinch of salt

Cut the bacon into bits and fry in a large skillet. When the pan is well greased, add the chopped onion and green pepper. Continue frying until the onion is golden and the bacon crisp. Add the water, tomato sauce, sugar, salt and rice. Cover and bring to a boil. Lower the heat and cook for about 20 minutes until the liquid is absorbed and the rice is tender.
