ZUCCHINI AND NOODLES 
3 toes crushed garlic
1 med. onion, chopped finely
3 green onions, chopped finely
2 tbsp. olive oil
2 tbsp. hot butter
1/2 (17 oz.) can tomatoes (crushed or blended)
1/2 bay leaf
1/2 tsp. thyme
Salt and pepper to taste
6-8 med. zucchinis, washed and drained, cut into 1/2-inch cubes
8 or 6 chicken cubes to flavor water to cook noodles
8 oz. pkg. noodles

Saute garlic, onions in oil and butter for 5 minutes, then add blended tomatoes, thyme, bay leaf, salt and pepper and zucchini cubes; stir well. Cover tightly and cook until tender. Serve over noodles that have been cooked in chicken broth. Sprinkle with Romano or Parmesan cheese (optional). Makes 8 servings.
