ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 c. flour
1 tsp. vanilla
2 c. grated zucchini
1 tsp. salt
3 tsp. cinnamon
1/4 tsp. baking powder
2 tsp. baking soda
1 c. chopped nuts

Beat eggs until fluffy. Add sugar, vanilla, and oil; blend well. Stir in grated zucchini; blend in dry ingredients with creamed mixture. Fold in nuts.

Pour into greased and floured loaf pans. Bake at 350 degrees for 1 hour until done. Remove from pans to cool.
