MEXICAN CORNBREAD 
1 pkg. Jiffy cornbread mix
1 1/2 lb. ground beef
3/4 c. green peppers
1/2 c. onion
1 can cream corn
1 can whole kernel corn, drained
1 egg
1 c. milk
16 oz. shredded Velveeta

Combine cornbread mix, egg, milk and both cans of corn. Brown and drain hamburger meat. Saute peppers and onions. Mix with hamburger meat. Spread meat mixture over bottom of 9x13x2 inch baking dish. Cover with half of Velveeta. Pour cornbread mixture over meat and cheese. Top with remaining Velveeta. Bake at 350 degrees for 35-45 minutes.
