PINEAPPLE SUBSTITUTE 
1 gallon plus 1 c. zucchini squash, grated
1 tall can pineapple juice
1/2 c. lemon juice
2 c. sugar
2 tsp. pineapple extract
2 or 3 drops yellow food coloring

Bring to boil for 3 minutes. Pack in jars and hot water bath for 10 minutes or pressure until it reaches 5 pounds.
