PINEAPPLE SUBSTITUTE 
1 gallon plus 1 c. ground and peeled zucchini
1 dram oil of pineapple
1 (46 oz.) can unsweetened pineapple juice
1/2 c. lemon juice
3 c. sugar

Mix and boil for 3 minutes. Pack mixture in pint jars in a hot water bath for 20 minutes. This recipe is great for that zucchini that you never know what to do with. This crushed pineapple substitute can be used in salads, cakes, anything calling for crushed pineapple.
