FISH NORMANDY 
2 tbsp. butter
2 onions, finely chopped
1 1/2 tsp. cider vinegar
1/2 tsp. ground white pepper
4 apples, sliced
1 pt. apple juice
1/2 tsp. salt
6 whitefish fillets (4 oz. each)

Melt butter in large saucepan. Add onions and cook until soft. Add apple slices, apple juice, vinegar, salt and pepper and cook 1 minute longer. Arrange fish fillets in single layer in large pan. Pour apple mixture over fish. Cover with foil and bake at 400 degrees for 10 minutes or until fish flakes. Garnish with parsley. 6 servings.
