PASTA CARBONARA WITH VEGETABLES 
1 lb. fettucini or egg noodles
1/2 to 1 c. grated Parmesan
3 eggs
1/4 c. cream
1/4 to 1/2 lb. bacon
1/4 c. melted butter
Clove garlic
Salt and pepper
1/2 c. chopped scallions
3 c. total of chopped mixed vegetables: red pepper, mushrooms, peas, carrots, zucchini, broccoli, cauliflower

Can vary to increase recipe to serve more people. Beat eggs with cream, salt and pepper and set aside. Cook bacon, drain and set aside. Saute vegetables in 2 tablespoons bacon fat and set aside. Warm a casserole or large ceramic pasta bowl in oven (200 degrees). Cook and drain pasta. Add butter and toss with eggs (if pasta and bowl are hot, eggs should scramble and cook.) Add 1/2 cheese and warm vegetables. Crumble bacon and add to pasta, then add rest of cheese and serve.
