RHUBARB COBBLER 
BASE:

1 c. sugar
1/3 c. pancake flour
1 tsp. grated lemon rind
4 c. fresh rhubarb, cut in pieces

Mix dry ingredients and add rhubarb. Place in 9" square pan.

TOPPING:

3/4 c. pancake mix
2/3 c. sugar
1 beaten egg
1/4 c. melted butter

Combine pancake mix and sugar. Stir in egg until it is like coarse crumbs. Sprinkle over rhubarb. Drizzle with melted butter. Bake in a preheated 375 degree oven for 35 to 40 minutes.
