CRANBERRY - ORANGE NUT BREAD 
4 c. all-purpose flour
1 1/2 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 c. cranberries, chopped
1 c. pecans, chopped
2 tsp. grated orange rind
2 eggs, beaten
1 1/2 c. orange juice
1/2 c. vegetable oil

Sift together dry ingredients. Stir in cranberries, nuts and orange rinds. Combine eggs, orange juice and vegetable oil. Add to dry ingredients, stirring until just moistened. Divide batter into 3 lightly greased and floured 7 1/2 x 3 1/2 x 3 1/4 inch loaf pans. Bake in a preheated oven for 45 to 50 minutes or until done.
