CHICKEN WITH BROCCOLI 
2 whole chicken breasts, skinned and boned
4 tbsp. soy sauce
1 tbsp. cornstarch
1 tbsp. dry sherry
1 slice ginger root
5 tbsp. cooking oil
1/2 bunch fresh broccoli
1/4 c. walnuts (optional)

Mix soy sauce, cornstarch and sherry. Cut chicken into inch pieces and mix with sauce. Cut broccoli into pieces about 2 inches long. Stir fry in 2 tablespoons oil for 2 minutes, remove from pan. If nuts are desired, cook in 1 tablespoon oil and then remove from pan. Put remaining oil in pan, add ginger. Add chicken and mixture. Stir fry for 2 minutes. Add broccoli and nuts, remove ginger. Stir fry a little longer, just to mix.
