CHEESE-TOPPED BAKED ZUCCHINI | |
1/2 onion, chopped 1 clove garlic, minced 4 celery stalks, diced 5 tbsp. oil 1 1/2 c. low-fat cottage cheese 6 med. zucchini Dash pepper 1/2 c. grated sharp Cheddar cheese 2 eggs, beaten 1/4 c. chopped parsley or cilantro 1/2 tsp. salt Preheat oven to 350 degrees. Slice zucchini in half lengthwise. Place halves, cut side up, in greased baking dish; cover and bake 15 minutes. Saute onion, garlic and celery in oil; stir into cottage cheese along with Cheddar cheese, eggs, parsley, salt and pepper. Spread mixture over zucchini halves and bake again, uncovered, until zucchini feels done when poked with a fork (another 15 minutes or so). Makes 6 servings. |
