CALIFORNIA CHICKEN 
6 chicken breasts
1/2 tsp. salt
1/4 tsp. lemon pepper
1/2 c. chopped onion
1 tsp. celery salt
1/4 tsp. basil
1/4 tsp. marjoram
1/4 c. dry sherry
1 tbsp. lemon juice

GARNISH:

2 med. tomatoes
1 ripe avocado, sliced
Ripe olives
3/4 c. shredded Cheddar cheese

Arrange chicken in 10 cup shallow casserole; season with salt. Combine other ingredients in bowl and then pour over chicken. Cover with foil and bake 45 minutes at 350 degrees. Core tomatoes and cut in wedges. Remove foil and arrange tomatoes, avocados and olives. Bake additional 15 minutes, then sprinkle with cheese and bake 5 more minutes. Serves 4.

This makes a gorgeous presentation. Chicken can also be marinated in sauce for several hours before baking. I serve it with rice pilaf, green salad - or fruit - and garlic bread.
