KIX TOFFEE 
1 c. butter
1 c. sugar
2 1/2 c. Kix

Melt butter and sugar in heavy skillet or saucepan. Cook over medium heat for 20 to 25 minutes until mix caramelizes. (Light in color and heavy consistency). Stir constantly. Remove from heat. Stir in Kix and turn on to baking sheet. Spread to 1/4 thickness. Let cool and break into pieces.

I made this 2 weeks ago and it turned out delicious. I tried to make it yesterday and today and it turned out horribly -- dry and practically no toffee -- I have no idea what is going wrong. Maybe you can help me out? Thanks.

I had something similar happen. Second batch - butter and sugar separated instead of caramelized. I think I wasn't using high enough heat. Salvaged it by putting in oven for a few minutes at 475°F.

If your butter and sugar separate, keep stirring until it comes back together, be patient, it will recombine. Once it's back together, remove from heat and mix in cereal.
