SPINACH LASAGNA 
1 lb. ricotta or cottage cheese
1 1/2 c. Mozzarella cheese (6 oz.); reserve 1/2 c.
1 egg
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
1 c. water
1 tsp. salt
3/4 tsp. oregano
1/8 tsp. pepper
2 (15 1/2 oz. each) jars of spaghetti sauce; reserve 1/2 c.
1/2 pkg. lasagna noodles, uncooked

Mix ricotta and Mozzarella cheese and eggs. Add spinach, pepper, oregano, salt, and sauce. Layer noodles, cheese, and sauce mixture. Pour 1 cup water around entire perimeter of baking dish. Top with remaining cheese and sauce. Cover and bake in a 9 x 13 inch pan at 350 degrees for 30-45 minutes. Better if made the day before and baked the next day. Serves 6-8.
