JAMBALAYA 
1 tbsp. butter
1 tbsp. olive oil
1 lb. lean cubed pork
1 lg. chopped onion
1 lb. lean cubed ham
1 c. rice
4 c. water
1/2 c. sherry
1 tsp. dry mustard
1/2 tsp. celery salt
1/2 tsp. summer savory
1/2 tsp. thyme
1/4 tsp. black pepper

Heat butter and oil in skillet. Add and brown pork and onion. Add ham; saute 3 minutes. Transfer meats and onion to casserole and cover with rice. Put in skillet water, sherry, mustard, and seasonings; bring to boil. Pour into casserole and stir at once into meat mixture. Cover and bake at 325 degrees for 40 minutes. Stir once with fork during cooking. Serves 4.
