RED VELVET CAKE 
3/4 c. shortening
2 1/4 c. sugar
3 eggs
3 oz. red food coloring, mix into paste & add 3 tbsp. cocoa
3 3/8 c. flour
1 1/2 tsp. salt
1 1/2 tsp. vanilla
1 1/2 tsp. baking soda
1 1/2 to 1 3/4 c. buttermilk
1 1/2 tbsp. vinegar
1 1/2 tsp. butter flavoring

Sift together dry ingredients; set aside. Cream together shortening, sugar and eggs; add coloring. Stir soda, vinegar and buttermilk gently to blend and add alternately with flour mixture; mix well. Stir in butter flavoring and bake in 3 greased and floured 9 inch cake pans at 350 degrees for 30 minutes.

FROSTING:

3 tbsp. flour
1 tsp. vanilla
1 c. milk
1 c. shortening
1 tsp. vanilla
1 c. sugar

On low heat, cook together flour, vanilla and milk until thick. Cool. Cream together shortening, vanilla and sugar. Add to cooled mixture. Spread on layers. Keep cake in a cool place.
