AUNT MAUDE'S APPLE CAKE 
1 1/2 c. Mazola oil
3 eggs
2 c. all purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
3 c. diced raw apples (tart) (yellow transparent or Winesap are best)
1 c. pecans
1 c. raisins (optional)

Blend oil, eggs (slightly beaten), sugar and dry ingredients sifted with flour leaving enough to coat other ingredients (apples, nuts, raisins). Fold in apples, nuts and raisins. Pour batter into a 13"x9"x2" pan. Bake at 325 degrees for 35 to 45 minutes or until cake leaves the side of pan and has reached the desired degree of doneness. Remove from oven and pour sauce over cake while still in pan.

SAUCE:

1/2 c. buttermilk
1 stick butter
1 c. white sugar
1/2 tsp. vanilla
1/2 tsp. baking soda
1 1/2 tsp. white syrup

Place ingredients in large saucepan. Boil rapidly 2 minutes. Pour over cake while still in pan. Cool. Can be served warm or cold.
